Main Dish

Stir Fried French Beans with Pork Mince


Ingredients:

-         500 grammes French beans
-         150 grammes pork mince
-         2 cloves of garlic
-         1 shallot
-         ½ teaspoon dark soy sauce
-         1 tablespoon of oyster sauce
-         Cooking oil for shallow frying, about 1 ½ cup

Seasoning:

-         ¼ teaspoon flaky sea salt
-         ¼ teaspoon caster sugar
-         ½ teaspoon light soy sauce
-         1 teaspoon corn flour
-         Ground pepper
-         Sesame oil
-         ½ tablespoon water

Method:

1.      Trim both ends of the beans and snap them into similar size, about 5cm/2” long. Wash, drain and dry.
2.      Mix the pork mince with the seasoning above and put them in the fridge to rest for 20 minutes.
1.      Heat the wok with the cooking oil, when it is hot, put in the French beans, use medium heat and stir the beans occasionally. Fry the beans till the skin of the beans wrinkle, it may take about 5 mins. Turn the heat off, take the beans out and drain them from excess oil and cool down.
2.      Meanwhile, take the pork mince out from the fridge, mince the shallot coarsely, bash the garlic and chop them into chunks and set aside.
3.      When the oil cools down, pour most of them away and leave about 2 tablespoon in the wok. Heat the wok up again and fry the shallot and the garlic till they give out aroma and start to turn soft.
4.      Put in the pork mince and sautéed them with the shallot and garlic till the pork is cooked. Put in the French beans and stir a few times to mix them with the pork. Add in the dark soy sauce and the oyster sauce and sautéed till the beans and the pork mince are covered evenly with the sauces.
5.      Serve them immediately when hot.

Hint:

-         It is important to fry the beans till they wrinkle in order to get the right texture.
-         You could substitute French beans with flat beans
-         When seasoning, best to put the corn flour and the water last.
-         Best to serve this dish with plain steam rice. Most children love this dish!
