Tapas/Finger Food

Honey Glazed Pork Ribs

Ingredients:

-        800 grammes pork ribs
-        1 tablespoon lemon juice
-        Ground pepper
-        1 tablespoon liquid honey
-        1 tablespoon water

Marinade:
-        2 cloves garlic
-        1 shallot
-        1 small knob of fresh root ginger
-        1/3 cup light soy sauce
-        1 tablespoon dark soy sauce
-        1 tablespoon sugar
-        Pinch of salt

Method:

1.      Rub the slab of pork rib with ground pepper and sprinkle with lemon juice, then cut it into individual ribs. Set aside
2.      Chop the garlic, the shallot and the ginger finely and put them in a mixing bowl with the light and dark soy sauce, sugar and salt and mix them until the sugar and salt has dessolved.
3.      Put the pork ribs in the mixture and marinade them for at least 4 to 5 hours.
4.      Set the oven to grill 220C/425F or 210C/410F for convection oven. Use a roasting tin/tray with a roasting rack. Carefully scrap off  any garlic or shallot or root ginger from each rib and put them on top of the rack, meaty side up, and put the rack on top of the tin/tray.
5.      Grill the meaty side for 7 – 8 mins, then turn the ribs to the other side and grill for 5 mins.
6.      Meanwhile, mix the honey with the water. After the bony side has been grilled for 5 mins, brush a layer of  honey evenly on each rib. Then, turn the ribs back to the meaty side and brush a layer of honey evenly on each rib. Grill for another 4-5 mins or till the ribs turn golden brown.
7.   You could brush on a last layer of honey if you want and serve them with salad of your choose.

Hints:

-        If there is minced garlic, shallot or ginger stick to the rib when grill, they will char very quickly and burn the ribs.
-        You may want to have more layer of honey or higher proportion of honey than water. Do bear in mind that the ribs could burn easily if too much honey is applied. So, reduce the grill time after you applied the thicker honey.
-        You can line the tin/tray with foil to catch all the drippings for easy cleaning.
