Meat/Calorie Restricted

Poached Skinless Chicken Breast

Ingredients : 

-        200 grammes  skinless chicken breast (212 calories)
a-      5 - 6 cups of water
-        2 table spoons of course sea salt
   Pinch of white pepper

Method:

  1. Clean and dry the chicken breast, rub it with a little pepper.
  2.  Fill a medium size saucepan half full about 5 - 6 cups , add the sea salt and bring it to boil.
  3. Put the chicken breast into the boiling salt water and lower the heat to simmer. Leave it in very low heat and simmer the breast slowly till it is just cooked (about 9 - 10 minutes depends on the thickness of the breast).  Take the breast out to rest and cool down.
  4. Cut the chicken breast into slices of 1 cm thick, put them on top of any salad you have prepared.

Hint:

- Poaching the chicken in salt water is oil free cooking, it also maintain the flavour of the chicken without marinades or seasoning thus no additional calories.
- If your chicken breast is thick, make sure you poach it longer. 
- You may put in the herbs you like when you poach the chicken breast.
